The organic bakery Franz & Xaver and the Coffee Friends Lounge have now officially merged. Building on Franz & Xaver's long-standing baking tradition, Coffee Friends Organic Bakery maintains the same commitment to quality, taste, and honest craftsmanship.
The name is new. What remains are the recipes, the philosophy, and the people behind them. Now everything is under one roof for even more moments of enjoyment.

Our organic baked goods are lovingly handcrafted, using ingredients from certified organic farming and with a clear focus on their origin. We want to know where our ingredients come from, how they are grown, and who is behind them. And we believe you want that too.

From the beginning to the present day
The story of our organic bakery begins in Kempten...
There, Franz Fäßler was one of the first to convert his bakery entirely to organic production. The resulting organic whole-grain bakery was a pioneering effort for healthy and traditionally produced products.
The reasons for this were the preservation of traditional baking craftsmanship, daily freshness, production of organic products and the highest quality.

The birth of Franz & Xaver ...
In 2011, Franz Fäßler handed over his business to the Allgäu organic spelt bakery, trusting that his life's work would be continued in the same spirit. Since 2013, the bakery has operated under the name Franz & Xaver, further sharpening its focus on spelt grain, regionality, and genuine craftsmanship.

Franz & XAver is now Coffee Friends Organic Bakery!
With the merger with the Coffee Friends family, a new chapter begins in 2025: Franz & Xaver becomes Coffee Friends Organic Bakery. The values, the philosophy, and the artisanal quality remain. The name continues to grow, and with it, the idea of making honest organic craftsmanship accessible to even more people.

Long fermentation time & genuine craftsmanship
Our breads and baked goods are made from high-quality organic ingredients – with a clear focus on nutrient-rich whole-grain spelt. Careful processing, long fermentation times, and genuine craftsmanship ensure high organic quality that you can taste – and appreciate.
Because more and more people are becoming sensitive to certain ingredients, we're taking things a step further. That's why, in addition to classic breads, we also offer lactose-free baked goods, bread recipes without yeast, and pure sourdough breads.
For those who have to completely avoid gluten, we also carry gluten-free breads in various varieties, which we source from the organic bakery Schubert & Franz Mühlenbäcker.

Naturally, we use only organic ingredients. Depending on the season, we process fresh fruit and create new cakes time and again – handmade, honest, and with a great feel for flavor.

Every day we prepare fresh lunch dishes – using regional ingredients, great care, and the aim of only putting what we ourselves would enjoy eating on your plate. Freshness, quality, and a respectful approach to food are always our top priorities.
We cook without additives, baking mixes, or shortcuts. Instead, we rely on artisanal preparation, traditional recipes, and precise knowledge of what goes into our dishes.
Whether it's hearty quiches, fresh pasta salad or our legendary bread pudding – we create honest cuisine that fills you up, does you good and simply tastes good.

Our bakers and pastry chefs passionately develop new ideas and refined recipes. This results in unique creations like our popular "Franzis," delicious crispy breadsticks made with wholesome grains, and homemade dips.

Our promise
To this day, we continue the tradition of our organic and spelt bakery. We work without the addition of any additives and do not use any pre-made baking mixes. We know all our ingredients and are proud to prove every day that producing baked goods without additives is possible.
From grain seed to finished baked product: all our baked goods are made from purely organic ingredients. Nutrient-rich wholegrain spelt and wholegrain rye remain our primary focus.
But we too have adapted to the passage of time and its demands. In recent years, we have adjusted our product range to cater to food intolerances. We therefore offer lactose-free, yeast-free, and gluten-free bread, as well as bread made with natural sourdough.
